Kidnappers of all sauces
Straccetti are unique creations that remind us of lilies. Their rolled shape and the rough surface covered with small creases turn this pasta into the "kidnapper" of all sauces: Once a sugo has touched the Staccetti´s creases they remain united forever. The special taste and the spectacular shape of this pasta is bound to have an effect- on your eyes as well as on your palate!
Ingredients
Durum wheat from organic farming (Apulia), Italian spring water and lots of love.
Straccetti taste best with:
Due to their rolled shape Straccetti are perfectly able to bond with any kind of sauce, and, therefore can be enjoyed in many ways. Besides all types of pestos, sugos made of tomatoes, ricotta/ cheese, fish, as well as vegetables like zucchini, broccoli or radicchio go well with this pasta. We like Straccetti best sprinkled only with some olive oil and parmesan cheese, as this makes us enjoy the wonderful taste of the Apulian wheat best.
Preparation:
Bring a generous amount of water (1l per 100gr pasta) to a boil, then add salt and the pasta. Stir the Straccetti regularly and leave them to boil for about 6 to 7 minutes until they are "al dente." The cooking time is only a guideline and can be adjusted according to ones own preferences- but we recommend the Straccetti be served "al dente." After boiling, strain, shake lightly and mix with a sauce of your choice.
