La Pasta

The recipe for our pasta contains besides "Passione e Perfezione":

1. Ingredients of impeccable quality

We only use organic durum wheat from prime locations in the Apulian tableland for our pasta- a region renown for being one of Italy’s best growing areas for durum wheat due to its unique climatic conditions.

2. Traditional craftsmanship

Our pasta is made in small family businesses according to the traditional method deriving from the 19th century. The fresh dough is worked with handmade bronze-forms, which give the pasta its characteristic rough surface and later makes it bond perfectly with sauces. Next, the pasta is slowly dried for 48 to 72 hours. The slow drying is essential for the taste of the high quality wheat to fully unfold (industrially produced pasta is only dried for a maximum of 3 hours). Finally, the pasta is subjected to a strict quality check and then hand-packed.

3. Responsibility towards nature

We want to play a part in conserving nature’s diversity. That is why all our products are 100% organic and our packaging is made of biodegradable materials whenever possible.

We gladly accept longer production times and smaller outputs for the result: Pasta with the wonderful taste and scent of Apulia’s wheat fields in summer- close your eyes and breathe in the aroma!
